2021 Obscura Red

Our OBSCURA Red blend consists of two Qvevri fully ripe Shiraz, one Qvevri destemmed Greanche and one fully ripe Mourvèdre, with natural fermentation starting spontaneously after seven to eight days. During fermentation, the cap was crushed four times a day with a special wooden tool. The wine then remained on the skins for a further six months and was lightly pressed daily. The prolonged contact with the skins promotes the extraction of tannins, helps to preserve the wine and provides a natural alternative to SO2 without any additives or adjustments. The wine was then separated from the skins without pressing and the components were allowed to clarify, unfiltered and unfined, before blending and bottling. The wine may have a certain amount of sediment.
