The grapes are fermented in small open fermenters (1 ton and 1.4 tons) with very low extraction only once a day for 10 to 14 days. All fermentations are carried out with whole grapes and both carbonic and semi-carbonic methods are used during fermentation. The grapes are pressed into tanks before drying and racked 1 - 2 times to remove the coarse lees. They are then transferred to old 400-liter barrels to complete malolactic fermentation and maturation. The wine is bottled in the same year, at the beginning of summer.
The grapes are grown in the Swartland district, more precisely in the Paardeberg district, in the Western Cape in South Africa. The soils are very poor, decomposed granite soils with a sandy top layer and an average annual rainfall of 450 - 500 mm in this area. All vineyards are dryland bush vines.
During the harvest, the grapes were picked early to preserve freshness, natural acidity and a lower alcohol content. No additives are used in the production of L EQUINOX WINES apart from a small dose of sulphur. Bottles produced: 531 units.
