2021 Merlot Südtirol

This Merlot has an intense ruby color, is compact and dense, with a warm, concentrated bouquet in which superficial notes of blackberry jelly are combined with subtle tones reminiscent of undergrowth. On the palate, it unfolds its distinctly vinous aroma, which, in combination with its elegant tannin structure, gives it a long and persistent finish. After delivery, the grapes are lightly crushed and destemmed. After a short maceration, the must is fermented for around 10 days. During fermentation, the must is kept in contact with the skins by pumping over and gently crushing. At the end of fermentation, we allow the temperature to rise slightly in order to achieve better color and flavor extraction from the grape skins.
