2021 Cabernet Sauvignon Südtirol

Very compact with an intense deep ruby red, powerfully aromatic on the nose, persistent, constantly evolving, warm and ripe, even after a long time in the glass. It is robust on the palate, with a fine, long-lasting tannin. After delivery, the grapes are lightly crushed and destemmed. After a short maceration, the must is fermented for around 10 days. During fermentation, the must is kept in contact with the skins by pumping over and gently crushing. At the end of fermentation, we allow the temperature to rise slightly in order to achieve better color and flavor extraction from the grape skins.
