Bottling date: Spring 2017.It is a classic bottle fermentation set for a long time in strict compliance with all the rules of classic sparkling winemaking, with 24-30 months of foaming and remuage su pupitres for 45 days, the wine then remains 1 month before disgorging and 3 more stop before marketing.Dosage at disgorgement: 4 g/l.Color: straw yellow with very fine-grained and persistent perlage.Aroma: of elegant complexity reminiscent of almond, hazelnut and a slight expression of bread crust, very intense with a floral finish. Taste: enveloping, with a delicate foam and great persistence, fruity and well-structured, with fresh, clean acidity and a hint of citrus fruit on the finish. Focus: the proportion of Chardonnay and Pinot Noir changes slightly each year, depending on the vintage.Curiosity: Pinot Noir was introduced in Umbria in the first half of the 1970s by Giorgio Lungarotti, who chose a selection suitable for sparkling wine production because he wanted to apply his own classic method in Torgiano, convinced that the soil and climatic characteristics of the area could produce grapes with a good acidity level that would allow production on a par with the most famous areas in terms of freshness and elegance.
