It is made from Sangiovese, Canaiolo and Colorino grapes, which are harvested and selected only by hand. Fermentation takes place in stainless steel tanks at a controlled temperature and daily punching down. The wine then matures for 24 months in French oak barrels and a further 12 months in glass before being released onto the market.

Bibi Graetz is a young, dynamic winemaker from Tuscany. The Azienda Agricola Testamatta winery, with 80 hectares of vineyards, is located in Fiesole with a view over Florence. It is not only the high scores awarded by Robert Parker and the Wine Spectator that have made him famous, but above all the quality of his wines, which distinguishes him as one of Tuscany's great winegrowers. The former artist Bibi Graetz designs his labels himself, giving them their individual character. His wines are mainly made from Sangiovese, as well as the Tuscan grape varieties Canaiolo and Colorino. His best-known wine is Testamatta, which he himself describes as the "Pétrus of Tuscany".
