Our mapping of the soils of the large Maternigo estate has allowed us to identify certain parcels that have proven to be true crus due to the characteristics of their terrain, their exposure and the results of the vines. One of these is the Impervio vineyard, so called because of its steep slope. Impervio is characterized by the presence of white and yellow marl, which is particularly suitable for the production of a Valpolicella with a very fresh, balanced style. Thanks to the innovative study of soil and plant characteristics that we have carried out at Maternigo, every single vine is constantly monitored and the ripening of the fruit is checked daily: The careful selection of grapes results in a wine that is both fruity and spicy, with a well-modulated structure and concentration and sufficient acidity to give it good ageing potential. Age of the vineyard: 10 years. Cultivation: Guyot. Vinification technique. Harvest: overripe grapes on the plant around mid/late October. Crushing and destemming Alcoholic fermentation and maceration: 20 days/temperature 20-23€ C. Maturation in 20/25 hl Slavonian oak barrels: 14 months. Bottling and ageing in the bottle: 6 months.
