Shiny gold-colored robe with green reflections. Gentle, regular, slow effervescence. Very clear, exquisite, airy bouquet. Notes of delicately fragrant flowers (honeysuckle, jasmine), ripe, exquisite, almost roasted citrus fruits (cedar apple). This is followed by iodine aromas reminiscent of sea air, harmoniously combined with accents of still warm, freshly baked sweet pastries. The palate is densely concentrated, invigorating and slightly lemony. Fresh and powerful on the attack. The iodine aromas dominate, accompanied by a hint of citrus fruit (oranges) and Madagascar vanilla as well as harvest aromas (almonds, cereals). The effervescence is delicately melting with a chalky freshness. The finish is initially light and powdery, but then surprises thanks to its tannins with a fast-paced, racy, spicy finish with roasted notes.
Recommendation: Serve well chilled at 8 degrees Celsius. As an aperitif for any special occasion. It is a wonderful accompaniment to food, aromatic fish goes particularly well with it, e.g. sushi or monkfish fillet with truffle foam. Classics such as caviar, oysters or fine Brillant Savarin cheese are always a real treat.
