2010 Vin Santo Torgiano 0.375L

The grapes are harvested at the end of September and left to dry on racks in ventilated fruit cellars until December. Vinification takes place as follows: The grapes are selected by hand, followed by direct pressing in vertical hydraulic presses with a yield of 25%, slow fermentation in oak barrels, ageing for 90 months in oak barrels, 10% of which are new wood. The wine is amber in color with light golden hues. It impresses with intense aromatic notes reminiscent of apricots, dried figs and light jam, with hints of honey and yellow flowers on the finish. On the palate, we experience a balanced concentration of sugar, with slightly citrusy acidity and intense fruit notes, a long-lasting finish and finesse-rich sweetness. Focus: a meditation wine of Umbrian and Tuscan tradition, which has always been produced by anyone who had a few vines in their garden, drying the grapes in the attic hanging from the wooden beams of the roof or spread out on latticework (graticci). In our region, Vin Santo has always been a precious gift for guests, accompanied by the "cialda", a sweet, thin local aniseed cookie, as evidenced by the rich collection of "cialda" irons that tell of its use over the centuries. Curiosity: the name Vin Santo derives from the fact that the wine is traditionally bottled before Easter, during Holy Week, after maturing in small chestnut barrels.
