VINEYARD: In the municipality of Dolegna del Colli. TYPE OF SOIL: MERGEL AND CLAY GRAPE ù Friulian. VINIFICATION SYSTEM, Cappuccina, AND MATURING: The grapes are harvested entirely by hand in crates, with an eight-hour cold maceration in a horizontal press and subsequent purification of the must by decanting. Fermentation takes place in steel tanks at a controlled temperature of 18€C. At the end of fermentation, the product thus obtained undergoes non-reductive ageing and therefore matures for around five months in the same vats while being kept at a constant temperature. At the end of this period, bottling takes place, followed by refinement in the bottle before the wine is marketed. ORGANOLEPTIC CHARACTERISTICS: Straw yellow color with characteristic greenish reflections and a personal scent, with a delicate aroma and hints of almonds. The taste is full-bodied, dry and harmonious.
