2018 Bellavista Pas Operé Extra Brut

An idea that rises into the sky. This cuvée symbolizes purity, energy, freshness and change, like clouds drifting across the sky. Pas Operé, a blend of Chardonnay and Pinot nero, is the result of a rigorous selection in the vineyard and comes exclusively from plots over 30 years old, mostly facing south-east. A selection of 40 wines from each vintage aims to define an essential expression: refined, elegant and uncompromising. It should be noted that 50% of the must ferments in small white oak barrels, while the total aging period in the cellar is no less than 6 years. Clearly, a cuvée that is intended to evolve over time and is as expressive as it is long-lasting. A sumptuous white mousse is accompanied by a perlage of unsurpassed persistence and finesse, while the aromas are complex, albeit essential, from the outset. On the palate, it reveals itself to be a comprehensive, elegant and refined wine with nuances of golden apple and chamomile, honey and vanilla, aniseed and Mediterranean shrub berries. The lively, silky texture is supported by a subliminal acidity in an incomparable progression.
