Recommendation: Drinking temperature 16-18 degrees Celsius, open 1 hour in advance, decant if necessary. Goes very well with dark meat dishes, roast fillet of beef with black truffles and Macaire potatoes, braised shoulder of lamb or fine game birds. Hard cheese made from raw milk or aromatic semi-soft cheese also goes very well with this wine.
