Fermentation in steel on the skins for 10 days. Refinement for 12 months in barriques and at least 12 months in the bottle. Color: deep ruby red with violet blue notes. Aroma: exceptional and rich aromatic intensity with fruity aromas and notes of blueberry, blackberry, cassis, dried plums and red jam, chocolate and sweet notes of roasted wood on the finish. Taste: dense concentration, balanced sweetness and lively acidity, tannins of solid structure with lingering hints of red jam. Dark chocolate and spices can be found in the long persistence. Focus: in the Montefalco area, Sagrantino was used for centuries as a mass wine and was therefore grown in the gardens of all monasteries and convents. Its high walls were a valuable protection against phylloxera, the disease that destroyed vineyards throughout Europe at the beginning of the 19th century. From the vines saved in this way, it was possible to take the precious stones to replant the destroyed vineyards. Curiosity: Sagrantino is one of the grape varieties with the highest polyphenol content among those cultivated worldwide and therefore requires great care in the vineyard to maintain a vegetative-productive balance that leads to good ripening of the grapes.
