2023 Castel Firmian Sauvignon

Traditional vinification with short maceration on the skins for maximum ageing potential and extraction of the typical characteristics of the grape variety. Fermented at a controlled temperature (16-18 degrees), this wine is straw yellow in color with spicy hints of green pepper, elderberry, gooseberry, asparagus and tomato leaf. On the palate it is fresh and pleasantly acidic.

Recommendation: It is a good accompaniment to rich dishes such as smoked fish and grilled fish, white meat and polenta with medium-aged cheese.
