The grapes come from the best south-facing vineyards in Pfaffstätten. Thanks to very gentle processing, we can fill a very clean must into used barrique barrels. This must is then given plenty of time to ferment at higher fermentation temperatures. The wine then remains on the lees until February/March and is stirred every 2 weeks. The result is a very full-bodied, powerful white wine with a wonderful, varietal fruit on the nose.
