The grapes come from the Holzspur vineyard in Tattendorf. Only a few grapes remain on each vine in order to achieve optimum physiological ripeness. Only when the skins, seeds and stems are perfectly ripe are the grapes carefully harvested by hand. The grapes are then processed very gently and the mash ferments in open containers. The mash cake is submerged 1-2 times a day. The maceration time is of course much longer and depends on the year and ripeness. Only the best batches are then divided into 50% new barrique barrels and 50% 2nd fill barrels and then mature for 18 months. Only after this long maturation phase are all the barrels tasted and only the best are blended for this wine.
