The grapes come from the south-facing slopes in Pfaffstätten and from the vineyards in Tattendorf. Through very gentle processing, the must obtained is filled into barrique barrels, where it can then ferment in peace at a higher fermentation temperature. After fermentation, the Chardonnay remains on the lees in the barrels and is stirred every 2 weeks. Furthermore, our Chardonnay undergoes malolactic fermentation until the following spring. The Chardonnay is then desulphurized for the first time in April and removed from the lees. This very long storage without sulphur and on the lees makes the wine very dark yellow in color and very creamy and full-bodied on the palate.
