The grapes are harvested very early to preserve the wonderful aroma, acidity and lightness. The grapes are processed very gently in cool conditions and the resulting must is fermented at cooler temperatures in stainless steel tanks to preserve the typical elderflower and muscat aromas. After fermentation, the wine is filtered and bottled as a fruity wine with slightly more residual sugar.
