Fermentation takes place in steel tanks with maceration on the skins for around 25-28 days. This is followed by 12 months of ageing in barriques and at least one year of bottle ageing. Color: deep ruby red with light violet reflections. Aroma: intense, complex and broad, with red fruits and sweet spices. Taste: the wine is very concentrated, harmonious and enveloping, juicy with dense, warm tannins and notes of blackberry jam and currants, very long and pleasantly fresh finish. Focus: San Giorgio bears the signature of Giorgio Lungarotti, who introduced Cabernet Sauvignon to Umbria in the 1960s and was one of the first in Italy to combine it with Sangiovese, resulting in this "super-Umbrian", whose first vintage dates back to 1977. Curiosity: according to an ancient custom that is still alive today in the Torgiano countryside, on the evening of April 23rd, the eve of St. George's Day, bonfires are lit in the vineyards with the shoots of the winter pruning.
