Tawny ports differ from the ruby-red Ruby ports in that they are matured from the start in smaller wooden barrels in an oxidative process, i.e. with a little more oxygen contact, and therefore lose their depth of color (hence the name Tawny). They are usually somewhat softer, rounder and more restrained in their depth of fruit than the Rubys, and their aroma of apricots and often brioche or fresh bread is more reminiscent of a mature red sweet wine. Due to the maturation in wood, the high alcohol and usually also sugar content, they also keep longer when opened, up to a month, in contrast to the Rubys, which should be drunk within a few days.
