2021 Royal Brut AOP Crémant de Loire

The grapes are selected from the best plots located on clay-limestone hills at an altitude of 90 meters above sea level. The vines are cultivated with respect for the environment and the specific characteristics of each plot. The grapes are harvested by hand at optimum ripeness. The grapes are pressed whole (not destemmed) to avoid crushing. The different juices are then separated: only the first half of the pressing is used for this cuvée. The separation of the juices produces a very fine wine with a long finish. The wine is then matured on the lees for at least 36 months to enhance its roundness and complexity.
