Jassarte is a wine with an ancient spirit and at the same time very innovative. It comes from the old pre-vineyard tradition of a mixed set. In the past, wine was not identified with a variety and its characteristics as it is today. It was the expression of an unrepeatable vineyard, made up of several grapes selected to bring out particular balances and identities, or coming from a simple family stratification. The co-fermentation of several varieties creates a synergy that develops absolutely unbalanced aroma and flavor profiles in the wine.
