VINEYARD: Valbuins is located in the municipality of Dolegna del Collio. TYPE OF SOIL: Marl and clay. Training system: Guyot. VINIFICATION AND REFINEMENT: The grapes are harvested entirely by hand in crates, soaked for eight hours in a cold horizontal press and the must is purified by settling. Fermentation takes place 100% in steel at a controlled temperature of 14-16€C. Once fermentation is complete, the wine is left to mature in steel tanks at a constant temperature for around eight months. At the end of this period, the wine is bottled. A further long maturation in the bottle follows before the wine is marketed. ORGANOLEPTIC CHARACTERISTICS: Straw yellow color with greenish reflections. It has an intense bouquet reminiscent of green pepper, sage, peach and tomato leaves, full-bodied, dry, soft, with a long aromatic finish.
