2021 Chardonnay Collio Livon

VINEYARD: located in the municipality of Dolegna del Collio. SOIL TYPE: marl and clay grapes. TYPE OF GRAPE: Cappuccina, AND VINIFICATION: The grapes are harvested by hand in crates, soaked for 8 hours in a cold horizontal press and the must is purified by settling. Fermentation takes place in steel tanks at a controlled temperature of 18 €C. Once fermentation is complete, the resulting product is not poured out and therefore remains in the same vats to mature at a constant temperature for around five months. At the end of this period, the wine is bottled. This is followed by a further long ageing period in the bottle before the wine is marketed. ORGANOLEPTIC CHARACTERISTICS: Pale straw yellow in color, it has a very elegant bouquet that ranges from apple to bread crust to peach and hazelnut. It is velvety on the palate and leaves the mouth clean and dry.
