Salmon pink with shiny red reflections. Very intense color. Fine, exquisite, dynamic effervescence. A summery-fresh, wonderfully intense bouquet with notes of ripe, juicy yellow fruit (vineyard peaches), red, slightly tart berries (currants) and citrus fruit (blood oranges). On contact with the air, there are also notes of apricots from Roussillon, reminiscent of jam. The attack on the palate is flattering, juicy and concentrated. A saline, chalky freshness follows immediately and ensures an exquisite suppleness. The aromas are reminiscent of ripe, crunchy fruit (vineyard peaches, nectarines) and citrus fruits (lemons), which give the wine a lemony, slightly bitter taste. The gentle, delicate effervescence is perfectly blended with a velvety texture. The extremely tasty, wonderfully long finish is almost a little salty and wonderfully reflects the chalky, dry soils from which this champagne originated, with a hint of tannins and bitterness.
Recommendation: Serve at 8 degrees Celsius, excellent as an aperitif, also goes very well with dishes with fine poultry, poached salmon or scallops. Pastries such as sponge cakes with ripe red berries also harmonize perfectly.
